Best preservation date in closed jar: about 2 years. Once opened, store in the refrigerator and consume in 2 days.
Suggestions for use: Cut into very fine gills (scales) using a cutter or a knife. Lay the raw gills on pasta, risotto, meat and fish carpaccio, grilled meat, boiled potatoes, purée, grilled scallops, omelets, fried egg and white pizza. The liquid inside is edible and we recommend to pour it directly on foods.
